Two Obsessions
The first was an obsession that begun awhile ago, but was reunited when I heard Grant Achatz speak at yesterday’s IDEA conference. Achatz is the Executive Chef of the esteemed Alinea restaurant in Chicago, and quite possibly, one of the most creative minds in the culinary world. He not only approaches food in an artful, deconstructive way; but also his entire life. When discussing his approach to the design of the restaurant, he talked of how he and his partner broke down every single element of the dining experience. The result is high quality oak tables (he believes fancy tablecloths are only there to cover up shitty tables), silverware plates for the silverware to rest on, and limes heat wrapped in thick plastic as centerpieces (which later become punctured and dripped over a dessert). Form and function are wovenly seamlessly in all his decisions. And the food… Your entree may come with a burning autumn branch stemming from it, in order to remind the diner of perhaps a nostalgic family Fall meal. Or, be gently place on a porous pillow that emits a light smell of lavendar (captured inside) that releases at the perfect consistency (determined by the weight of the plate and food that rests upon it). He’s inspired by feelings, emotions and memories. It’s so simple, but yet so novel. He took this same determination of questioning and breaking down elements to finding the best treatment for his Stage 4 carcinoma cancer of the tongue. It worked. He has kept his tongue and is now in remission.

The second obsession is a new one. It began when I first heard DJ Earmworm coyly recognize his own accolades. He is a mash up sound engineer, designer, artist and whatever else you can think to call this production. He believes most great ideas come from existing ones. It’s how one interprets, hears or “mashes” an idea that makes it become something else. He knows he’s working with original pieces (in this case music), but believes he’s bringing together all the various emotions from each of these songs and is able to help the listener go through that array of emotions in just one piece. He once spent four days straight in his pajamas to make a mash-up of the top 25 songs of 2007. Event artists like Radiohead and Kanye West are already doing things in support of mashing by releasing the elements of various songs (you must listen to this: http://djearworm.com/reckoner-lockdown.htm). Who would have thought that these two men would sound so beautiful together?
